Ingredients

1 lb ground beef
1 medium onion, chopped
1 red bell pepper, diced
2 cloves garlic, minced
1 tbsp olive oil
1 15-oz can black beans, drained
1 cup corn kernels
1 10-oz can diced tomatoes with green chilies
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 1/2 cups tortilla chips, crushed
2 tsp chili powder
1 tsp cumin
1/2 tsp oregano
Salt to taste
Pepper to taste
1/4 cup chopped fresh cilantro
Sour cream for serving

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and red bell pepper, sautéing until soft, about 5 minutes.
3. Add the garlic and cook for another minute until fragrant.
4. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a spoon as it cooks.
5. Stir in the chili powder, cumin, oregano, salt, and pepper. Cook for another 2 minutes to let the flavors meld.
6. Add the black beans, corn, and diced tomatoes with green chilies. Stir well and let simmer for 5 minutes.
7. Transfer the beef mixture into a greased 9x13-inch baking dish.
8. Sprinkle 1/2 cup of cheddar cheese and 1/2 cup of Monterey Jack cheese over the mixture.
9. Scatter the crushed tortilla chips evenly over the top, followed by the remaining cheese.
10. Bake in the preheated oven for 20 minutes until the cheese is melted and bubbly.
11. Remove from oven and let it cool for 5 minutes. Garnish with chopped cilantro and serve with a dollop of sour cream.

Storage

Store the leftover casserole in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place the desired portion in a microwave-safe dish and heat on medium power until warmed through, about 2-3 minutes. Alternatively, reheat in a preheated oven at 350°F (175°C) for 10-15 minutes.
