Spicy Sausage and Rice

Ingredients
1 lb spicy sausage
1 cup white rice
2 cups chicken broth
1 large onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp cayenne pepper
Salt and pepper to taste
2 tbsp olive oil
2 tbsp chopped fresh parsley
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add the diced onion and bell peppers and sauté until softened, about 5 minutes.
3. Stir in the minced garlic and cook for another minute.
4. Add the spicy sausage and cook until browned, breaking it into smaller pieces.
5. Stir in the smoked paprika and cayenne pepper, coating the sausage and vegetables evenly.
6. Add the rice and stir well to combine.
7. Pour in the chicken broth and bring to a boil.
8. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and liquid is absorbed.
9. Season with salt and pepper to taste.
10. Garnish with chopped fresh parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the microwave or on the stovetop over medium heat until heated through, adding a splash of broth if needed.
