Spicy Moroccan Chickpea Stew

Ingredients
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp smoked paprika
1/2 tsp cayenne pepper
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1 can (28 oz) crushed tomatoes
1 can (15 oz) chickpeas, drained and rinsed
1 cup vegetable broth
1 large carrot, sliced
1 red bell pepper, chopped
1 zucchini, chopped
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion and cook until translucent, about 5 minutes.
2. Stir in garlic, cumin, coriander, smoked paprika, cayenne pepper, cinnamon, and ginger. Cook for 1 minute until fragrant.
3. Add crushed tomatoes, chickpeas, vegetable broth, carrot, bell pepper, and zucchini. Stir well.
4. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, until vegetables are tender.
5. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Storage
Store the stew in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat on the stove over medium heat until warmed through or in the microwave for 2-3 minutes, stirring halfway.
