Spicy Mediterranean Chickpea Sandwich

Ingredients

1 can chickpeas (15 oz)
1/4 cup mayonnaise
1 tbsp sriracha sauce
2 tbsp lemon juice
1/2 tsp smoked paprika
1/4 tsp salt
1/4 tsp pepper
2 tbsp fresh parsley, chopped
4 slices whole-grain bread
2 leaves romaine lettuce
1 tomato, sliced
1/4 red onion, thinly sliced

Instructions

1. Drain and rinse the chickpeas, then place them in a bowl and mash them slightly with a fork.
2. Add mayonnaise, sriracha sauce, lemon juice, smoked paprika, salt, and pepper to the mashed chickpeas and mix well.
3. Stir in chopped parsley until evenly distributed.
4. Toast the whole-grain bread slices until golden brown.
5. Lay a romaine lettuce leaf on two slices of the toasted bread.
6. Spoon the chickpea mixture evenly over the lettuce leaves.
7. Top with tomato slices and red onion rings.
8. Cover each sandwich with the remaining bread slices, cut in half, and serve.

Storage

Store leftover chickpea mixture in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a microwave-safe dish on medium power for 1-2 minutes if desired, though best served fresh.
