Spicy Mango Tacos

Ingredients
1 lb chicken breasts or firm tofu, cubed
1 tbsp olive oil
1 tsp chili powder
1 tsp paprika
1/2 tsp cayenne pepper
1/2 tsp salt
1/4 tsp black pepper
1 ripe mango, diced
1/2 red onion, finely chopped
1 jalapeno, seeded and minced
1/4 cup fresh cilantro, chopped
2 tbsp lime juice
1 avocado, sliced
8 small corn tortillas
Lime wedges, for serving
Instructions
1. In a bowl, combine olive oil, chili powder, paprika, cayenne pepper, salt, and black pepper. Add chicken or tofu and toss to coat evenly.
2. Heat a grill or skillet over medium-high heat. Cook chicken or tofu for 5-7 minutes on each side until cooked through and slightly charred.
3. In another bowl, mix diced mango, red onion, jalapeno, cilantro, and lime juice to create the mango salsa.
4. Warm tortillas in a skillet for about 30 seconds on each side or until pliable.
5. Assemble tacos by placing grilled chicken or tofu, avocado slices, and mango salsa onto each tortilla. Serve with lime wedges.
Storage
Store leftover tacos in an airtight container in the refrigerator for up to 2 days. Keep tortillas and fillings separate for best results.
Reheating
Reheat the chicken or tofu filling in a skillet over medium heat until warmed through. Warm the tortillas separately before assembling the tacos.
