Ingredients
1 cup all-purpose flour
1/2 cup cornmeal
1 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper
1/2 cup whole milk
2 large eggs
1 cup fresh or frozen corn kernels
1/4 cup diced jalapenos
1/4 cup chopped green onions
1/4 cup shredded cheddar cheese
1/4 cup finely chopped cilantro
Vegetable oil for frying
Instructions
1. In a large mixing bowl, whisk together the flour, cornmeal, baking powder, salt, and black pepper.
2. In a separate bowl, beat the eggs and then add the milk, mixing well to combine.
3. Pour the wet ingredients into the dry ingredients and stir until just combined.
4. Fold in the corn kernels, jalapenos, green onions, cheddar cheese, and cilantro.
5. Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
6. Drop spoonfuls of the batter into the hot oil, flattening slightly with the back of the spoon.
7. Cook fritters until golden brown on each side, about 3-4 minutes per side.
8. Remove fritters from the skillet and drain on paper towels.
9. Serve warm with your favorite dipping sauce.
Storage
Store leftover fritters in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat fritters in a preheated 350°F oven for about 10 minutes, or until heated through.
