Spicy Honey-Lime Sweet Potato Fries

Ingredients

2 large sweet potatoes (about 1.5 lbs total)
2 tbsp olive oil
1 tsp paprika
1/2 tsp cayenne pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp black pepper
1 tsp salt
3 tbsp honey
1 lime, zested and juiced
1 tbsp chopped fresh cilantro

Instructions

1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Peel the sweet potatoes and cut them into 1/4-inch thick fries.
3. In a large bowl, toss the sweet potato fries with olive oil, paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt until evenly coated.
4. Spread the fries in a single layer on the prepared baking sheet.
5. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the fries are golden brown and crispy.
6. In a small bowl, mix the honey with lime zest and juice.
7. Once the fries are done, drizzle the honey-lime mixture over them and toss to coat.
8. Serve immediately, garnished with fresh cilantro.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 375°F (190°C) for 5-7 minutes until warmed through.
