Spicy Honey Garlic Chicken Stir Fry

Ingredients
1 lb boneless skinless chicken thighs, cut into bite-sized pieces
2 tbsp soy sauce
2 tbsp honey
1 tbsp sriracha sauce (adjust for spice preference)
3 cloves garlic, minced
1 tbsp fresh ginger, minced
2 tbsp vegetable oil
1 red bell pepper, sliced
1 cup broccoli florets
1 medium carrot, julienned
1/4 cup green onions, chopped
1 tbsp sesame seeds
Salt to taste
Pepper to taste
1 tbsp cornstarch
2 tbsp water
Instructions
1. In a bowl, mix soy sauce, honey, sriracha, garlic, and ginger to create the sauce.
2. In a separate bowl, coat chicken pieces with cornstarch, salt, and pepper.
3. Heat 1 tbsp oil in a large pan over medium heat.
4. Add chicken and cook until golden brown, about 5 minutes. Remove chicken from pan.
5. Add remaining oil to the pan and stir fry bell pepper, broccoli, and carrot for 3-4 minutes.
6. Return the chicken to the pan.
7. Pour the sauce over the chicken and vegetables and stir well to coat.
8. Cook for another 2-3 minutes until the sauce thickens.
9. Garnish with green onions and sesame seeds before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, microwave on medium power for 2-3 minutes or until heated through, or reheat in a pan over medium heat until warm.
