Spicy Herb Potato Chips

Ingredients

4 large Russet potatoes
2 tbsp olive oil
1 tsp cayenne pepper
1 tsp garlic powder
1 tsp onion powder
2 tsp dried rosemary
1 tsp dried thyme
1 tsp sea salt
1 tsp black pepper

Instructions

1. Preheat your oven to 375°F.
2. Wash and thinly slice the potatoes to about 1/8 inch thick using a mandolin slicer for uniformity.
3. Pat the potato slices dry with a paper towel to remove excess moisture.
4. In a large bowl, toss the potato slices with olive oil until evenly coated.
5. Add cayenne pepper, garlic powder, onion powder, dried rosemary, dried thyme, sea salt, and black pepper to the bowl and mix until all slices are well seasoned.
6. Arrange the potato slices in a single layer on a baking sheet lined with parchment paper.
7. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy, flipping halfway through.
8. Remove from the oven and let cool slightly before serving.

Storage

Store in an airtight container at room temperature for up to 3 days.

Reheating

To reheat, place in a preheated oven at 350°F for 5 minutes to restore crispiness.
