Ingredients
2 cups granulated sugar
1 cup light corn syrup
1/2 cup water
1/4 teaspoon salt
2 cups raw peanuts
1 tablespoon unsalted butter
1 teaspoon baking soda
1 tablespoon grated fresh ginger
1/2 teaspoon cayenne pepper
Instructions
1. Line a baking sheet with parchment paper and set aside.
2. In a heavy saucepan, combine sugar, corn syrup, water, and salt over medium heat. Stir until sugar dissolves.
3. Stir in peanuts and cook, stirring frequently, until the mixture reaches 300°F on a candy thermometer.
4. Remove from heat and quickly stir in butter, baking soda, grated ginger, and cayenne pepper until well combined.
5. Immediately pour the mixture onto the prepared baking sheet, spreading it out thinly with a spatula.
6. Allow to cool completely, then break into pieces.
Storage
Store in an airtight container at room temperature for up to 2 weeks.
