Spicy Cowboy Casserole
A hearty and flavorful casserole that combines spicy ground beef with wholesome corn, beans, and crispy tater tots, perfect for a comforting family dinner or a festive gathering.

Ingredients
1 lb ground beef
1 small onion, diced
1 clove garlic, minced
1 jalapeño, diced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies, undrained
1 cup cheddar cheese, shredded
1 bag (32 oz) frozen tater tots
1 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
Salt and pepper to taste
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat.
3. Add diced onion and garlic, sauté until translucent.
4. Stir in ground beef and cook until browned. Drain excess fat.
5. Add jalapeño, black beans, corn, tomatoes with green chilies, chili powder, cumin, salt, and pepper. Cook for another 5 minutes.
6. Transfer the beef mixture into a 9x13 inch baking dish.
7. Top with shredded cheddar cheese.
8. Arrange frozen tater tots evenly over the cheese layer.
9. Bake in the preheated oven for 35-40 minutes, or until the tater tots are golden and crispy.
10. Let cool for 5 minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual servings in the microwave on high for 1-2 minutes or in the oven at 350°F (175°C) for 10-15 minutes until heated through.
