Spicy Chocolate Chili Con Carne

Ingredients
2 lbs ground beef
1 large onion, diced
3 cloves garlic, minced
2 red bell peppers, chopped
2 jalapeno peppers, seeded and chopped
1 can (28 oz) crushed tomatoes
2 cans (15 oz each) kidney beans, drained and rinsed
2 cups beef broth
1 oz dark chocolate, chopped
2 tbsp chili powder
1 tbsp ground cumin
1 tsp smoked paprika
1 tsp oregano
Salt and pepper to taste
Olive oil for cooking
Instructions
1. In a large pot, heat olive oil over medium heat. Add the onions and garlic, sauté until translucent.
2. Add the ground beef and cook until browned.
3. Stir in the bell peppers and jalapeno peppers, cooking for an additional 5 minutes.
4. Mix in the crushed tomatoes, kidney beans, and beef broth. Bring to a simmer.
5. Stir in the dark chocolate, chili powder, cumin, smoked paprika, oregano, salt, and pepper.
6. Reduce the heat to low, cover, and let it simmer for at least 1 hour, stirring occasionally.
7. Adjust seasoning if needed and serve hot.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop over medium heat, stirring occasionally until warmed through.
