Spicy Chipotle Refried Beans

Ingredients
2 cups pinto beans (cooked)
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp chipotle powder
Salt to taste
1/4 cup vegetable broth
1 tbsp lime juice
2 tbsp fresh cilantro, chopped
Instructions
1. Heat olive oil in a skillet over medium heat.
2. Sauté onions until translucent, about 3 minutes.
3. Add garlic, cumin, smoked paprika, and chipotle powder, and cook for another 2 minutes.
4. Add cooked pinto beans and mash them using a potato masher.
5. Stir in vegetable broth and lime juice, mixing until smooth.
6. Season with salt and simmer for 5 minutes, stirring occasionally.
7. Garnish with fresh cilantro before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat, adding a splash of vegetable broth if needed, until warmed through.
