Ingredients
1.5 lbs boneless, skinless chicken breast
2 cans (15 oz each) black beans, drained and rinsed
1 cup frozen corn
1 cup salsa
1 cup shredded cheddar cheese
1/2 cup chopped fresh cilantro
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup sliced jalapeños
1 lime, cut into wedges
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add chicken breast and season with cumin, chili powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 8-10 minutes. Remove from heat and shred the chicken using two forks.
3. In a large mixing bowl, combine shredded chicken, black beans, corn, salsa, and half of the cilantro. Mix well.
4. Transfer the mixture into a 9x13 inch baking dish.
5. Top with shredded cheddar cheese and sliced jalapeños.
6. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
7. Remove from the oven and let it cool for a few minutes. Garnish with remaining cilantro and serve with lime wedges.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
