Ingredients

4 flour tortillas
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 cup diced jalapeños
1/2 teaspoon ground cumin
2 tablespoons butter
1 cup salsa

Instructions

1. Preheat a large skillet over medium heat and add 1/2 tablespoon of butter.
2. Place one tortilla in the skillet and sprinkle with 1/2 cup cheddar cheese, 1/4 cup Monterey Jack cheese, and 1 tablespoon diced jalapeños.
3. Dust with a pinch of cumin for added flavor, then top with a second tortilla.
4. Cook for 2-3 minutes until the bottom is golden and the cheese begins to melt.
5. Carefully flip the quesadilla and cook the other side for another 2-3 minutes.
6. Remove from the skillet and repeat with remaining ingredients.
7. Slice into wedges and serve with a side of salsa.

Storage

Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days.

Reheat in a skillet over medium heat for 2-3 minutes per side or until heated through.
