2 tbsp soy sauce
1 cup chopped scallions
1/4 cup chopped fresh parsley

Instructions

1. Heat olive oil in a large skillet over medium-high heat.
2. Add diced onions and bell peppers, sauté until softened.
3. Stir in the cooked chicken breast and cook for 2 minutes.
4. Add the cold cooked rice, breaking up any clumps.
