Ingredients
1 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
3 medium carrots, sliced
1 medium zucchini, sliced
1 small head green cabbage, chopped
1 (14.5 oz) can diced tomatoes
4 cups vegetable broth
1 tsp cumin
1 tsp smoked paprika
1/2 tsp cayenne pepper
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Instructions
1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes.
2. Stir in the green and red bell peppers, carrots, and zucchini. Cook for another 5 minutes, stirring occasionally.
3. Add the chopped cabbage and can of diced tomatoes, and stir to combine.
4. Pour in the vegetable broth, and season with cumin, smoked paprika, cayenne pepper, salt, and pepper.
5. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, or until the vegetables are tender.
6. Stir in the fresh parsley before serving.
Storage
Store the soup in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat individual servings in the microwave for 2-3 minutes or on the stovetop over medium heat until warmed through.
