Ingredients
1 tbsp olive oil
1 medium onion, diced
3 cloves garlic, minced
1 lb ground turkey
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (15 oz) diced tomatoes with green chilies
2 cups chicken broth
1 packet taco seasoning
1/2 tsp paprika
1/2 tsp cayenne pepper
Salt and pepper to taste
1 lime, juiced
1/4 cup fresh cilantro, chopped
1 avocado, diced
1 cup shredded cheddar cheese
Tortilla chips for serving
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until soft.
2. Add ground turkey and cook until browned.
3. Stir in black beans, corn, diced tomatoes with green chilies, and chicken broth.
4. Mix in taco seasoning, paprika, cayenne pepper, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
5. Stir in lime juice and fresh cilantro.
6. Serve hot topped with avocado, cheddar cheese, and tortilla chips.
