Ingredients
2 cans (15 oz each) black beans, drained and rinsed
1/2 cup breadcrumbs
1/4 cup chopped fresh cilantro
1/4 cup finely chopped red onion
1/4 cup chopped jalapeños
1 tablespoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large egg
2 tablespoons olive oil
4 whole wheat burger buns
Optional toppings: avocado slices, lettuce, tomato, red onion
Instructions
1. In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some beans whole for texture.
2. Add breadcrumbs, cilantro, red onion, jalapeños, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir to combine.
3. Crack the egg into the mixture and mix until fully incorporated.
4. Divide the mixture into 4 equal portions and shape each into a patty.
5. Heat olive oil in a large skillet over medium heat. Add the patties and cook for 4-5 minutes on each side, or until they are crispy on the outside and heated through.
6. Serve on whole wheat burger buns with your choice of toppings such as avocado slices, lettuce, tomato, and red onion.
Storage
Store leftover patties in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place patties in a skillet over medium heat for 3-4 minutes per side or until heated through.
