Spiced Roasted Cauliflower with Chickpeas

Ingredients
1 medium cauliflower head, cut into florets
1 can (15 oz) chickpeas, drained and rinsed
3 tbsp olive oil
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp turmeric
1/2 tsp sea salt
1/4 tsp black pepper
1 tbsp lemon juice
1/4 cup fresh cilantro, chopped
Instructions
1. Preheat oven to 425°F (220°C).
2. In a large bowl, mix olive oil, cumin, smoked paprika, turmeric, sea salt, and black pepper.
3. Add cauliflower and chickpeas to the bowl and toss to coat evenly.
4. Spread the mixture onto a baking sheet in a single layer.
5. Roast in the oven for 25-30 minutes, or until cauliflower is golden and tender, flipping halfway through.
6. Remove from oven and drizzle with lemon juice.
7. Garnish with fresh cilantro before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
