Ingredients

1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp cayenne pepper
4 cups vegetable broth
1 cup canned pumpkin puree
1 1/2 cups cooked green lentils
1/2 tsp salt
1/2 tsp black pepper
1 tbsp apple cider vinegar
1/4 cup fresh cilantro, chopped (for garnish)

Instructions

1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
2. Stir in the garlic, cumin, cinnamon, nutmeg, and cayenne pepper, and cook for 1 minute until fragrant.
3. Add the vegetable broth and pumpkin puree, and stir to combine.
4. Bring the mixture to a simmer, then add the cooked lentils, salt, and black pepper.
5. Simmer for 15-20 minutes, allowing the flavors to meld together.
6. Stir in the apple cider vinegar, adjusting seasoning if necessary.
7. Serve hot, garnished with fresh cilantro.

Storage

Store the soup in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat the soup on the stovetop over medium heat, stirring occasionally until warmed through, or microwave on high for 2-3 minutes, stirring halfway.
