Cook time: 40 minutes
Serves: 8

Ingredients

1 1/2 lbs ripe pears, cored and sliced
1/4 cup granulated sugar
1 tbsp all-purpose flour
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1 tbsp lemon juice
1 tsp vanilla extract
1 store-bought pie crust
1 egg, beaten (for egg wash)
1 tbsp turbinado sugar

Instructions

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine sliced pears, granulated sugar, flour, cinnamon, ginger, nutmeg, lemon juice, and vanilla extract. Toss until the pears are evenly coated.
3. Roll out the pie crust on a lightly floured surface into a 12-inch circle. Transfer the crust to the prepared baking sheet.
4. Arrange the spiced pear mixture in the center of the crust, leaving a 2-inch border around the edges.
5. Fold the edges of the crust over the pears, pleating as necessary to create a rustic border. Brush the crust with beaten egg and sprinkle turbinado sugar over the top.
6. Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the pears are tender.
7. Remove from oven and let cool slightly before serving warm with a scoop of vanilla ice cream.
