Spiced Peach Cobbler Delight

Ingredients

6 large ripe peaches, peeled and sliced
1 cup granulated sugar
1/2 cup brown sugar
1/2 cup unsalted butter, melted
1 cup all-purpose flour
1 cup milk
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/4 tsp salt
2 tsp vanilla extract
1 lemon, juiced
1 tbsp cornstarch
Vanilla ice cream, for serving

Instructions

1. Preheat the oven to 350°F (175°C).
2. In a large mixing bowl, combine the sliced peaches with lemon juice, 1/2 cup granulated sugar, and cornstarch. Mix well and set aside.
3. In another bowl, whisk together the flour, remaining granulated sugar, baking powder, salt, cinnamon, nutmeg, and allspice.
4. Add milk, melted butter, and vanilla extract to the dry ingredients. Stir until smooth.
5. Pour the batter into a greased 9x13-inch baking dish.
6. Arrange the peach mixture evenly over the batter.
7. Sprinkle brown sugar over the top for caramelization.
8. Bake for 45-50 minutes until golden brown and bubbly.
9. Allow to cool slightly before serving with a scoop of vanilla ice cream.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Preheat your oven to 300°F (150°C) and reheat the cobbler for 10-15 minutes, or until warmed through.
