Ingredients

6 fresh peaches, peeled and sliced
1/4 cup honey
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1 tsp vanilla extract
1 tbsp lemon juice
1 cup all-purpose flour
1 cup milk
1/2 cup unsalted butter, melted
1/4 tsp salt
1 tsp baking powder

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a large bowl, combine sliced peaches, honey, 1/4 cup granulated sugar, brown sugar, cinnamon, nutmeg, ginger, vanilla extract, and lemon juice. Mix well and set aside.
3. In another bowl, whisk together flour, 1/4 cup granulated sugar, baking powder, and salt.
4. Gradually add milk to the dry ingredients, stirring continuously until a smooth batter forms.
5. Pour the melted butter into a 9x13-inch baking dish.
6. Pour the batter over the melted butter, but do not stir.
7. Spoon the peach mixture evenly over the batter, again without stirring.
8. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the batter is set.
9. Allow the cobbler to cool slightly before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual servings in the microwave for 30-40 seconds or in the oven at 300°F for 10 minutes.
