Ingredients

2 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
3 carrots, sliced
2 stalks celery, chopped
1 sweet potato, cubed
1 zucchini, chopped
1 cup butternut squash, cubed
1 red bell pepper, diced
1 can (14 oz) diced tomatoes
4 cups vegetable broth
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp ground cinnamon
Salt and pepper to taste
1/4 cup fresh parsley, chopped
1/2 lemon, juiced

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until fragrant.
3. Stir in carrots, celery, sweet potato, zucchini, butternut squash, and bell pepper.
4. Cook for 5 minutes, stirring occasionally.
5. Add diced tomatoes and vegetable broth.
6. Season with cumin, smoked paprika, cinnamon, salt, and pepper.
7. Bring to a boil, then reduce heat and simmer for 30 minutes.
8. Stir in fresh parsley and lemon juice before serving.

Storage
