Spaghetti Bolognese with Zucchini and Basil

Ingredients

8 oz spaghetti (uncooked)
1 lb ground turkey
2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
2 cups zucchini, diced
1 can (14 oz) crushed tomatoes
1/4 cup tomato paste
1/2 cup chicken broth
1/4 cup fresh basil, chopped
1 tsp dried oregano
Salt to taste
Pepper to taste
1/4 cup grated Parmesan cheese

Instructions

1. Cook the spaghetti according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
3. Add the ground turkey to the skillet, cooking until browned.
4. Stir in the diced zucchini, cooking for an additional 3-4 minutes.
5. Mix in the crushed tomatoes, tomato paste, chicken broth, dried oregano, salt, and pepper. Simmer for 15 minutes.
6. Stir in the fresh basil and cooked spaghetti, mixing well.
7. Serve hot, garnished with grated Parmesan cheese.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through, or microwave on high for 2-3 minutes.
