Spaghetti al Forno with Spinach and Ricotta

Ingredients
12 oz spaghetti
2 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
8 oz fresh spinach
1 cup ricotta cheese
2 cups marinara sauce
1 cup mozzarella cheese, shredded
1/2 cup parmesan cheese, grated
1 tsp dried oregano
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
1. Preheat your oven to 375°F (190°C).
2. Cook spaghetti according to package instructions until al dente, then drain.
3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
4. Add fresh spinach and cook until wilted, then remove from heat.
5. In a mixing bowl, combine ricotta cheese, half of the mozzarella, and parmesan cheese with cooked spinach mixture. Season with oregano, salt, and pepper.
6. In a baking dish, spread a layer of marinara sauce, followed by a layer of cooked spaghetti.
7. Add a layer of the ricotta-spinach mixture.
8. Repeat the layers, ending with marinara sauce on top.
9. Sprinkle the remaining mozzarella cheese over the top.
10. Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden brown.
11. Garnish with fresh basil leaves before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F for 10-15 minutes or until heated through.
