Southwestern Tater Tot Casserole

Ingredients
1 pound ground beef
1 medium onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 cup frozen corn
1 can (15 oz) black beans, drained and rinsed
1 packet (1 oz) taco seasoning
2 cups shredded cheddar cheese
1 bag (32 oz) frozen tater tots
1 cup salsa
2 tablespoons olive oil
Salt and pepper to taste
Chopped cilantro for garnish
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add diced onions, red bell pepper, and green bell pepper and sauté until they start to soften, about 5 minutes.
3. Add ground beef to the skillet; cook until browned, breaking it apart with a spoon.
4. Stir in taco seasoning, frozen corn, and black beans; cook for another 2-3 minutes.
5. Spread the beef mixture evenly in a 9x13 inch baking dish.
6. Layer the salsa on top of the beef mixture, followed by the shredded cheddar cheese.
7. Arrange the frozen tater tots evenly over the top.
8. Bake in the preheated oven for 40-45 minutes, or until the tater tots are golden brown and crispy.
9. Garnish with chopped cilantro before serving.
Storage
Cover the casserole tightly with plastic wrap or aluminum foil and store in the refrigerator for up to 3 days.
Reheating
Preheat the oven to 350°F (175°C) and reheat the casserole covered for 20-25 minutes or until heated through.
