Southwestern Tamale Pie

Ingredients
1 lb ground beef
1 cup cornmeal
2 cups chicken broth
1 can (15 oz) black beans, drained
1 can (15 oz) corn, drained
1 cup salsa
1 cup shredded cheddar cheese
2 tbsp olive oil
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chopped cilantro (optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
3. Stir in chili powder, cumin, salt, and pepper. Add black beans, corn, and salsa. Mix well and simmer for 5 minutes.
4. In a separate saucepan, bring chicken broth to a boil. Gradually whisk in cornmeal until thickened.
5. Spread the beef mixture into a baking dish. Pour cornmeal mixture over the top and spread evenly.
6. Sprinkle with cheddar cheese.
7. Bake in the preheated oven for 25-30 minutes, until golden and bubbly.
8. Garnish with cilantro before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F (175°C) for about 15 minutes or until heated through.
