Southwestern Sunrise Casserole

Ingredients
4 large eggs
8 oz chorizo sausage
1 cup shredded cheddar cheese
1/2 cup diced bell peppers
1/2 cup diced onions
1/2 cup halved cherry tomatoes
1/4 cup chopped cilantro
1 cup milk
2 cups cubed day-old bread
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp smoked paprika
Instructions
1. Preheat the oven to 375°F (190°C).
2. Cook the chorizo in a skillet over medium heat until browned and cooked through. Drain excess fat.
3. In a large bowl, whisk together eggs, milk, salt, black pepper, and smoked paprika.
4. Add bread cubes to the egg mixture, ensuring they are fully soaked.
5. Stir in cooked chorizo, bell peppers, onions, cherry tomatoes, and half of the cheese.
6. Pour the mixture into a greased 9x13 inch baking dish.
7. Top with remaining cheese and bake for 35-40 minutes, or until the casserole is set and the top is golden brown.
8. Let cool for a few minutes before garnishing with cilantro and serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual servings in the microwave for 1-2 minutes until heated through, or cover the whole casserole with foil and reheat in a 350°F oven for 15-20 minutes.
