Ingredients

1 lb boneless skinless chicken breast
8 oz spaghetti
1 tbsp olive oil
1 red bell pepper, diced
1 small onion, chopped
2 cloves garlic, minced
1 cup corn kernels
1 can (10 oz) diced tomatoes with green chilies
1/2 cup chicken broth
1 cup shredded cheddar cheese
1/4 cup chopped fresh cilantro
1 tsp ground cumin
1/2 tsp chili powder
Salt and pepper to taste

Instructions

1. Cook spaghetti according to package directions; drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add chicken breast and cook until browned and cooked through, about 6-8 minutes per side. Remove and slice into strips.
3. In the same skillet, add red bell pepper, onion, and garlic. Sauté until softened, about 5 minutes.
4. Add corn, diced tomatoes with green chilies, chicken broth, cumin, and chili powder. Bring to a simmer and cook for 5 minutes.
5. Return chicken to the skillet, add cooked spaghetti, and toss to combine.
6. Stir in shredded cheddar cheese until melted and well incorporated.
7. Garnish with chopped cilantro before serving.
