Ingredients
1 lb ground turkey
1 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 can (14.5 oz) diced tomatoes
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 packet (1 oz) taco seasoning mix
4 cups chicken broth
1/4 cup fresh cilantro, chopped
1 lime, juiced
Salt and pepper to taste
Optional: Sour cream, avocado slices, shredded cheese for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add ground turkey and cook until browned, about 5-7 minutes.
3. Stir in diced onion, garlic, and red bell pepper; cook until softened, about 4 minutes.
4. Add diced tomatoes, black beans, corn, and taco seasoning to the pot. Stir to combine.
5. Pour in chicken broth and bring to a boil.
6. Reduce heat to low and simmer for 15 minutes.
7. Stir in fresh cilantro and lime juice.
8. Season with salt and pepper to taste.
9. Serve hot with optional toppings.
Storage
Store leftover soup in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the soup in a pot over medium heat until heated through, or microwave individual servings for 2-3 minutes.
