Southwest Chicken Spaghetti

A zesty twist on the classic chicken spaghetti, infused with bold Southwest flavors, perfect for a cozy weeknight dinner.

Ingredients

8 oz spaghetti
1 lb boneless chicken breasts, diced
2 tbsp olive oil
1 medium onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes with green chilies
1 cup chicken broth
1 cup shredded cheddar cheese
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
Salt and pepper to taste
1/4 cup chopped fresh cilantro
1 lime, cut into wedges

Instructions

1. Cook spaghetti according to package instructions; set aside.
2. In a large skillet, heat olive oil over medium heat.
3. Add chicken breasts and cook until no longer pink, about 8 minutes.
4. Add onion, bell pepper, and garlic, sautéing until soft, approximately 5 minutes.
5. Stir in diced tomatoes, chicken broth, chili powder, cumin, paprika, salt, and pepper.
6. Simmer for 10 minutes, stirring occasionally.
7. Add cooked spaghetti and shredded cheddar cheese, mixing until cheese is melted.
8. Garnish with cilantro and serve with lime wedges.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through, or in the microwave for 2-3 minutes.
