Ingredients
1 cup chopped pecans
1 cup packed light brown sugar
1/2 cup all-purpose flour
2 large eggs
2/3 cup melted unsalted butter
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
2. In a large bowl, combine the chopped pecans, brown sugar, and flour.
3. In another bowl, beat the eggs, then add the melted butter and vanilla extract, mixing well.
4. Stir the wet ingredients into the dry ingredients until just combined.
5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
6. Bake for 20-25 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
7. Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
Reheating
To reheat, warm in a preheated oven at 300°F (150°C) for about 5 minutes or microwave for 10-15 seconds.
