Ingredients

2 lbs chicken breast, diced
1 lb baby potatoes, quartered
1 cup corn kernels
1 cup lima beans
1 large onion, chopped
3 cloves garlic, minced
2 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 tbsp olive oil
1 tsp smoked paprika
1 tsp thyme
1/2 tsp cayenne pepper
Salt and pepper to taste
1/4 cup fresh parsley, chopped

Instructions

1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until translucent.
2. Add chicken breast to the pot and cook until lightly browned.
3. Stir in smoked paprika, thyme, cayenne pepper, salt, and pepper.
4. Pour in chicken broth and diced tomatoes. Bring to a boil.
5. Add baby potatoes and reduce heat to a simmer. Cook for 15 minutes until potatoes are tender.
6. Stir in corn and lima beans, cooking for an additional 10 minutes.
7. Garnish with fresh parsley before serving.

Storage

Allow to cool and store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently in a pot over low heat, stirring occasionally, until warmed through.
