Ingredients
1 cup chickpea flour
1 cup water
2 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dried rosemary (optional)
Instructions
1. Preheat your oven to 450°F and place a cast-iron skillet inside to heat.
2. In a bowl, mix chickpea flour and water until smooth. Let it rest for at least 30 minutes.
3. Stir in olive oil, salt, pepper, and rosemary into the batter.
4. Carefully remove the hot skillet and add a tablespoon of olive oil to coat the bottom.
5. Pour the batter into the skillet, spreading it evenly.
6. Bake for 12-15 minutes until the edges are crispy and the center is firm.
7. Remove from oven, let it cool slightly, and slice for serving.
Storage
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place slices on a baking sheet and warm in a 350°F oven for 5-7 minutes until heated through.
