Smoky Vegetarian Goulash

Ingredients
2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 zucchini, sliced
1 cup button mushrooms, quartered
2 tsp smoked paprika
1 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp dried thyme
Salt and pepper to taste
1 (14 oz) can diced tomatoes
1 cup vegetable broth
2 cups elbow macaroni
1/4 cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until translucent.
3. Stir in bell peppers, zucchini, and mushrooms, cook for 5 minutes.
4. Mix in smoked paprika, cumin, oregano, thyme, salt, and pepper.
5. Add diced tomatoes and vegetable broth, bring to a simmer.
6. Stir in elbow macaroni, cover, and cook for 10 minutes or until pasta is al dente.
7. Remove from heat, sprinkle with fresh parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a saucepan over medium heat until warmed through, adding a splash of vegetable broth if needed.
