Ingredients
1 lb firm tofu, pressed and cubed
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 large red onion, sliced
8 oz mushrooms, sliced
2 tbsp olive oil
2 tsp smoked paprika
1 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
8 small flour tortillas
1 avocado, sliced
1/4 cup fresh cilantro, chopped
Lime wedges for serving
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large bowl, combine olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper.
3. Add the tofu, bell peppers, red onion, and mushrooms to the bowl and toss to coat evenly.
4. Spread the mixture onto a baking sheet in a single layer.
5. Bake in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and slightly charred.
6. While the fajita mix is baking, warm the tortillas in a dry skillet over medium heat.
7. To assemble, place a portion of the tofu and veggie mix onto each tortilla, and top with avocado slices, cilantro, and a squeeze of lime.
8. Serve immediately and enjoy your smoky, vibrant fajitas.
Storage
Store leftover fajita mix in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place the desired amount of fajita mix in a skillet over medium heat until warmed through, about 5 minutes.
