Smoky Spiced Lentil Soup

Ingredients
1 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground turmeric
1/4 tsp cayenne pepper
4 cups vegetable broth
1 1/2 cups water
1 cup dried green lentils
1 large carrot, diced
1 red bell pepper, diced
Salt and pepper to taste
Juice of 1 lemon
2 tbsp fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and cook until translucent, about 5 minutes.
3. Stir in minced garlic, smoked paprika, ground cumin, ground coriander, ground turmeric, and cayenne pepper; cook for 1 minute until fragrant.
4. Pour in vegetable broth and water, and bring to a boil.
5. Add lentils, carrot, and bell pepper. Reduce heat to a simmer and cook for 30-35 minutes until lentils are tender.
6. Season with salt and pepper to taste.
7. Stir in lemon juice and sprinkle with chopped parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat on the stovetop over medium heat until heated through, or microwave on high for 2-3 minutes, stirring halfway.
