Smoky Mango Salsa

Ingredients
2 ripe mangoes, diced
1 red bell pepper, diced
1/2 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 jalapeño, seeded and minced
2 cloves garlic, minced
1 lime, juiced
1/2 tsp smoked paprika
1/4 tsp sea salt
1/4 tsp black pepper
Instructions
1. In a large bowl, combine the diced mangoes, red bell pepper, and red onion.
2. Add the chopped cilantro, minced jalapeño, and garlic.
3. Squeeze the juice of one lime over the mixture.
4. Sprinkle with smoked paprika, sea salt, and black pepper.
5. Gently toss all ingredients together until well mixed.
6. Allow to sit for at least 10 minutes before serving for flavors to meld.
Storage
Store the salsa in an airtight container in the refrigerator for up to 3 days.
Reheating
Salsa is best enjoyed fresh. If needed, allow it to come to room temperature for 10 minutes before serving.
