Smoky Lentil Bolognese

Ingredients

2 tbsp olive oil
1 large onion, finely chopped
2 cloves garlic, minced
1 cup carrots, diced
1 cup celery, diced
1 cup mushrooms, diced
1 tsp smoked paprika
1 cup dried lentils
1 can (28 oz) crushed tomatoes
2 cups vegetable broth
1 tbsp tomato paste
1 tbsp balsamic vinegar
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
1/4 cup fresh parsley, chopped

Instructions

1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until translucent.
2. Add carrots, celery, and mushrooms, cooking until the vegetables are softened, about 5 minutes.
3. Stir in smoked paprika and mix well, letting the aroma develop.
4. Add lentils, crushed tomatoes, vegetable broth, tomato paste, balsamic vinegar, oregano, and basil; stir to combine.
5. Bring to a boil, then reduce heat to low and simmer uncovered for 45-50 minutes, stirring occasionally, until lentils are tender.
6. Season with salt and pepper to taste.
7. Garnish with fresh parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat on the stovetop over medium heat until warmed through, or microwave in a microwave-safe dish for 2-3 minutes until hot.
