Smoky Chipotle Macaroni and Cheese

Ingredients

8 oz elbow macaroni
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups whole milk
1 cup shredded sharp cheddar cheese
1 cup shredded smoked gouda
2 tbsp chipotle peppers in adobo sauce, minced
1/2 tsp smoked paprika
Salt and pepper to taste
1/4 cup panko breadcrumbs
2 tbsp chopped fresh cilantro

Instructions

1. Cook the macaroni according to package instructions and drain.
2. In a saucepan over medium heat, melt the butter.
3. Whisk in the flour and cook for 1 minute.
4. Slowly add the milk, whisking continuously until smooth.
5. Cook until the sauce thickens, about 5 minutes.
6. Stir in the cheddar, gouda, chipotle peppers, and smoked paprika until cheese is melted and smooth.
7. Season with salt and pepper to taste.
8. Combine the macaroni with the cheese sauce and mix well.
9. Pour the mixture into a baking dish and top with panko breadcrumbs.
10. Broil for 2-3 minutes until the breadcrumbs are golden brown.
11. Garnish with chopped cilantro before serving.
