Smoky Chipotle Brisket

Ingredients

5 lbs beef brisket
2 tbsp olive oil
1/4 cup chipotle powder
2 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp kosher salt
1 tbsp black pepper
1/2 cup apple cider vinegar
1 cup beef broth
1/4 cup brown sugar
2 tbsp Worcestershire sauce
1 large onion, sliced
4 cloves garlic, minced

Instructions

1. Preheat your smoker to 225°F.
2. Rub the brisket with olive oil, then coat evenly with chipotle powder, smoked paprika, garlic powder, onion powder, salt, and black pepper.
3. In a roasting pan, combine apple cider vinegar, beef broth, brown sugar, Worcestershire sauce, sliced onion, and minced garlic.
4. Place the brisket in the smoker and cook for about 8 hours, or until the internal temperature reaches 195°F.
5. Baste the brisket every 2 hours with the vinegar and broth mixture.
6. Once cooked, remove from the smoker and let it rest for 20 minutes before slicing.

Storage

Store leftover brisket in an airtight container in the refrigerator for up to 4 days.

Reheating

To reheat, place slices of brisket in a baking dish, cover with foil, and warm in a 300°F oven for 20-25 minutes.
