Ingredients

2 tablespoons olive oil
1 large onion, diced
4 cloves garlic, minced
2 bell peppers, chopped
2 cans (15 oz each) black beans, drained and rinsed
1 can (28 oz) crushed tomatoes
2 tablespoons tomato paste
2-3 chipotle peppers in adobo sauce, chopped
2 teaspoons ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon ground coriander
2 cups vegetable broth
Salt and pepper to taste
1 lime, juiced
Fresh cilantro for garnish

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add the onion and garlic, sautéing until the onion is translucent.
3. Stir in bell peppers and cook for an additional 3-4 minutes.
4. Add black beans, crushed tomatoes, and tomato paste, stirring well.
5. Mix in chipotle peppers, cumin, smoked paprika, oregano, and coriander.
6. Pour in vegetable broth and bring to a simmer.
7. Reduce heat to low and cover, cooking for 30 minutes.
8. Stir occasionally, adding salt and pepper to taste.
9. Before serving, stir in lime juice and garnish with fresh cilantro.

Storage

Store the chili in an airtight container in the refrigerator for up to 4 days.
