Ingredients

4 lbs russet potatoes
1 cup heavy cream

1/4 cup sour cream
4 cloves garlic, minced

2 tbsp fresh parsley, chopped
2 tsp fresh thyme, chopped

Instructions

1. Peel and cube the potatoes, then place them in the slow cooker.
2. Add the minced garlic, salt, and black pepper.
3. Pour in the heavy cream and add the butter cubes.
4. Cover and cook on high for 4 hours, until potatoes are tender.
5. Once cooked, mash the potatoes until smooth using a potato masher.
6. Stir in the sour cream, fresh parsley, and thyme until well combined.
7. Adjust seasoning if necessary, and serve warm.
