Slow Cooker Garlic Herb Cheesy Potatoes

Ingredients

2 lbs russet potatoes
1 cup sharp cheddar cheese, shredded
1/2 cup parmesan cheese, grated
1/2 cup cream cheese
1/4 cup unsalted butter
3 cloves garlic, minced
1 tbsp rosemary, chopped
1 tbsp thyme, chopped
1/2 tsp black pepper
1/2 tsp salt
1/4 cup whole milk
1/4 cup green onions, sliced

Instructions

1. Peel and dice the potatoes into 1-inch cubes.
2. In a slow cooker, combine the potatoes, garlic, rosemary, thyme, black pepper, and salt.
3. Add cream cheese, butter, and milk; stir to combine.
4. Cover and cook on low for 5 hours, stirring occasionally.
5. After 5 hours, stir in sharp cheddar and parmesan cheese until melted and creamy.
6. Garnish with sliced green onions before serving.

Storage
