Shrimp Tacos with Lime Slaw
These shrimp tacos are a quick and delicious meal featuring juicy, lime-seasoned shrimp paired with a refreshing and crunchy lime slaw. Perfect for any night of the week.

Ingredients
1 lb shrimp, peeled and deveined
2 tbsp taco seasoning
2 tbsp olive oil
2 limes, juiced
8 small corn tortillas
2 cups green cabbage, thinly sliced
1/4 cup red onion, thinly sliced
1/4 cup cilantro, chopped
1/4 cup mayonnaise
1 tbsp honey
Salt and pepper to taste
Instructions
1. In a large bowl, combine shrimp, taco seasoning, olive oil, and the juice of one lime. Mix well and let marinate for 10 minutes.
2. In another bowl, prepare the slaw by combining cabbage, red onion, cilantro, mayonnaise, honey, and the juice of the remaining lime. Season with salt and pepper to taste.
3. Heat a skillet over medium-high heat. Add the marinated shrimp and sauté for 4-5 minutes until cooked through.
4. Warm the corn tortillas in a dry skillet or microwave.
5. Assemble tacos by placing sautéed shrimp in the center of each tortilla and topping with lime slaw.
6. Serve immediately while warm.
Storage
Store leftover shrimp and slaw in separate airtight containers in the refrigerator for up to 2 days.
Reheating
Reheat shrimp in a skillet over medium heat until warmed through. Serve with fresh lime slaw.
