Shrimp Salad Delight
A refreshing and classic shrimp salad perfect as a light meal or appetizer, featuring succulent shrimp, crisp vegetables, and a zesty dressing that captures the essence of summer.

Ingredients
1 lb cooked shrimp, peeled and deveined
1/2 cup mayonnaise
2 tbsp lemon juice
1 tsp Dijon mustard
1/4 cup finely chopped celery
1/4 cup finely chopped red onion
1/4 cup chopped fresh dill
Salt and pepper to taste
4 cups mixed salad greens
1 avocado, sliced
1 lemon, cut into wedges
Instructions
1. In a large bowl, combine the mayonnaise, lemon juice, and Dijon mustard. Mix until smooth.
2. Add the cooked shrimp, celery, red onion, and dill to the dressing. Gently toss to coat.
3. Season the shrimp mixture with salt and pepper to taste.
4. Arrange the mixed salad greens on a platter or individual plates.
5. Spoon the shrimp mixture over the greens.
6. Top with avocado slices and garnish with lemon wedges.
7. Serve immediately and enjoy!
Storage
Store any leftover shrimp salad in an airtight container in the refrigerator for up to 2 days. Keep the salad separate from the greens to avoid wilting.
