Shepherd's Pie

Ingredients

1 tbsp olive oil
1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
1 cup carrots, diced
1 cup peas, frozen
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 cup beef broth
1 tsp thyme, dried
Salt and pepper to taste
4 cups potatoes, peeled and quartered
1/2 cup milk
2 tbsp butter
Salt to taste

Instructions

1. Preheat oven to 400°F (200°C).
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté until translucent.
3. Add ground beef, cook until browned.
4. Stir in carrots, peas, tomato paste, Worcestershire sauce, beef broth, thyme, salt, and pepper. Simmer for 10 minutes.
5. Meanwhile, boil potatoes in salted water until tender, about 15 minutes. Drain and mash with milk and butter until creamy.
6. Spread beef mixture in an even layer in a baking dish. Top with mashed potatoes, smoothing out with a spatula.
7. Bake for 25 minutes or until potatoes are golden brown.
8. Let cool slightly before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 15-20 minutes or until heated through.
