Ingredients

2 medium zucchinis
1 cup canned chickpeas, drained and mashed
1/2 cup chickpea flour
1/4 cup cornmeal
1/4 cup finely chopped green onions
2 cloves garlic, minced
1 tsp ground cumin
1/2 tsp smoked paprika
1/4 cup fresh parsley, chopped
1 tsp salt
1/2 tsp black pepper
1 tbsp lemon juice
Oil for frying

Instructions

1. Grate the zucchinis and place them in a bowl, sprinkle with salt, and let them sit for 10 minutes.
2. Squeeze the excess moisture out of the zucchini using a clean kitchen towel.
3. In a large bowl, combine the drained zucchini, mashed chickpeas, chickpea flour, cornmeal, green onions, garlic, cumin, smoked paprika, fresh parsley, lemon juice, salt, and pepper.
4. Mix until all ingredients are well incorporated.
5. Heat oil in a skillet over medium heat.
6. Drop spoonfuls of the mixture into the skillet, flattening them slightly with the back of the spoon.
7. Fry for about 3-4 minutes on each side or until golden brown.
8. Remove from the skillet and drain on paper towels.
9. Serve warm with your favorite dipping sauce.

Reheating

Reheat in a skillet over medium heat until warmed through, or bake in a preheated oven at 350°F for 10 minutes.
